When it comes to interesting food, Cookbook Author Tracey Medeiros takes the cake. Well, the cookie.

Tracey Medeiros has always had a passion for cooking. Not only is she an avid proponent of the farm-to-table movement, but she has just completed writing her sixth cookbook, which will be released in May 2023. Medeiros’ latest cookbook, The Art of Cooking with Cannabis (Skyhorse Publishing), has recently been awarded an Honorable Mention for the People’s Choice Cookbook of the Year by The Readable Feast. The Art of Cooking with Cannabis showcases a collection of personal stories as well as 125 nourishing recipes. “Insightful sidebars offer informative tips and how-to guidance while helping the cook to use cannabis with ease and confidence,” says Medeiros. “The folks who share them touch upon their personal struggles (from cancer to ulcerative colitis to psoriasis, to name only a few) and successes as well as the potential health and wellness benefits of the cannabis plant.”

All of the recipes are contributed by reputable bakeries from around the country, as well as several here in Colorado. The five local contributors include: Blue Sparrow Coffee and Love’s Oven in Denver, Mason Jar Event Group and River and Woods in Boulder, and The Regional in Fort Collins. For instance, the book’s Chewy Gingersnap Cookie Recipe (pictured left) is courtesy of Hope Frahm from Denver’s Love’s Oven bakery. “One of the best parts of being a food writer is that it offers me an opportunity to spread the word about the amazing work that these folks are doing to help promote community wellness through food and cannabis,” Medeiros adds. “These gingersnap cookies have a sugary exterior and a slightly chewy center. The simple cannabis-infused cookie recipe will become one of your must-have treats.”
