Chef Miles Odell had Denverites running all over the city chasing the breakfast sandwiches at Odell’s Bagel pop-ups. Now that he’s settled down to open up shop, we caught up with the chef to uncover the secrets behind his coveted bagel creations.

1Seasonal Heirloom Tomato
Select a rosemary bagel, toasted if not fresh, and slather with plain cream cheese. Slice ripe, juicy tomatoes from the farmers market, season with salt and pepper, and layer over the cream cheese. Add a dollop of salsa macha from Dos Caras, a local gem found at City Park and Highlands Farmers Market. Finish with a crack of black pepper and serve open-faced for a burst of summer flavor.
2Egg & Cheese
Grab an everything bagel, fresh from the oven or toasted if it’s cooled. Whisk two eggs, cook into a thin omelet, and melt American or cheddar cheese in the middle. Season with a pinch of salt and pepper. Feeling extra hungry? Add bacon, sausage, Taylor Ham, or breakfast sausage from Lottie’s Meat + Provisions. 3Classic Smoked Nova Lox
Start with a sesame seed bagel, fresh or toasted. Spread generously with scallion cream cheese, then layer on dill, parsley, chives, capers, diced tomatoes, and chopped red onion to stick to the cream cheese. Top with silky hand-sliced Nova lox from Odell’s for a luxurious touch. Drizzle with olive oil and serve open-faced.
