A new Cherry Hills location marks Lavender Coffee Boutique’s continued reimagining of coffee as ritual. Founder Lindsey Sozio shares how intention, wellness, and human connection shape every cup.

It’s about centering: “Lavender Coffee Boutique was born out of a need to find a moment of calm before the noise of the day starts and all things demand attention. Coffee evolved from caffeine into a grounding ritual, the only twenty minutes that truly belonged to me.”

A place to reset: “As the world gets louder, faster, and more digital, the simple act of enjoying a healthy coffee routine in a calming space became what we were craving.”

What’s inside the cup: “We realized there was plenty of fast coffee, but people wanted clean, intentional coffee that actually loves you back. Our goal is to offer a healthier experience from sourcing to roasting to the cup we serve in our cafés.”

Better tasting, better for you: “Caffeine often gets blamed for jitters or stomach issues, but high acidity and mold are usually the culprits. We source naturally gentler beans, roast low and slow, and third-party test for purity so coffee feels supportive, not harsh.”

Connecting with the world around you: “Community is not a buzzword to us. It’s the sum of a thousand small interactions. Everything we do, from gentle-acid beans to thoughtful layouts, is viewed through the lens of human connection and care.”

Slow down, be present: “In a fast, AI-saturated culture, Lavender is meant to be a deliberate antidote. A human-centered third space that encourages presence, repeated visits, and a slower, more intentional coffee ritual.”

Earl Grey Lavender Latte

Course Breakfast, Drinks

Ingredients

Earl Grey Lavender Latte
  • 1 oz. Earl Grey lavender syrup (recipe below)
  • 1 espresso shot
  • 8-10 oz. milk (steamed)
Earl Grey Lavender Syrup
  • 3-4 c. water
  • 1 tbsp. culinary lavender
  • 1-2 tbsp. loose-leaf Earl Grey tea
  • 2 c. sugar (raw)

Directions

Earl Grey Lavender Latte
  • To make the latte, combine 1 oz. of Earl Grey lavender syrup with 1 espresso shot and 8–10 oz. of steamed milk.
Earl Grey Lavender Syrup
  • Bring water to a gentle simmer and add lavender.
  • Steep for 5–8 minutes.
  • Strain out lavender, then add Earl Grey tea to the hot liquid and steep until fragrant but not bitter (about 5 minutes).
  • Strain again, return liquid to the pan, and stir in sugar.
  • Warm until sugar is fully dissolved.
  • Cool completely and store refrigerated for up to 2 weeks.
