Boulder’s East & Co. Goes Beyond the Restaurant

East & Co. brings all-day dining, local partnerships, and plenty of room to linger to Boulder’s Flatiron Park.

From morning coffee to evening cocktails, East & Co. is quickly becoming a new gathering place in Boulder’s Flatiron Park. The all-day concept brings food, drinks, and thoughtfully designed spaces under one roof, with plenty of reasons to stick around.

Most people frequent two places regularly: home and work. East & Co. sits in East Boulder as a third space for the community to unwind and connect.

Josh Dinar, founder of Working Title Food Group and co-owner of East & Co., recommends starting with the “secret” breakfast burrito, moving into lunch with the East & Co. burger, and ending the day with a spicy matcha margarita.

“Honestly, the best recommendation is to come for one part of the day and stay for another,” Josh says.

Unlike a traditional food hall, the East & Co. space is designed to flow with how people move through the day: lounging by the fireplace, holding a meeting in the conference room, sitting at the bar, playing a round of pool in the game room. Not to mention the full-service, all-day restaurant. Think of a gathering place that also has great food and drink.

Local partnerships are part of the equation too, with East & Co. working with Boulder businesses like OZO Coffee Roasters, Black Box Bakery and Boulder Farmer’s Market.

“They’re the heart of the place,” Josh says.

They stock the kitchen with produce, the cafe with coffee, the bar with local brews and the market with ingredients to take home. He emphasized how the local roots make East & Co. something that could exist anywhere.

Since it opened in May, the broader Boulder community has found its way over by hosting local events that make East & Co. feel like more than a venue. It hosts morning Pilates on the lawn, to evening cocktails and crafts.

“Boulder is a town that genuinely values connection, and East Boulder was missing a spot built for exactly that,” Josh says.

The versatile space also hosts a number of private events, whether it’s a party of twelve or 200. Though Josh particularly recommends the space for company gatherings, since the space makes the transition from working to celebrating easy.

Whether it’s starting a work morning with an ozo latte in the lounge or sipping on Sauvignon Blanc during happy hour on the terrace with friends, East & Co. is hosting it all under one roof.
