What began as a catering operation seventeen years ago has evolved into a one-of-a-kind shop in the Highlands offering chef demonstrations where liquid nitrogen transforms classic sweets. During the Sugar Science experience, sixteen guests get a close-up view as desserts are created before their eyes using innovative techniques. You’ll start by eating freeze-dried strawberry nitro popcorn that releases puffs of smoke as you chew, then dive into Oreo space foam—a cool, crunchy dessert that’ll take you back to the ’80s. While the creations are fun, Kleinman emphasizes safety. “Kids can enjoy the spectacle,” he says, “but cooking with candy at 350 degrees is not something they can do themselves. It’s basically lava. We offer chef demonstrations, not group experiments. So, kids, don’t try this at home.”
