Bring Greece to Denver by Restaurant Olivia
Eleven members of the Restaurant Oliviaare spending nine days throughout Greece and, on their return, will share their food and wine discoveries, learnings and invigorated passion in two dinner events with limited availability July 25 and August 8.
After a year of perpetual reinvention, some in reaction to state mandates, others due to product shortages, and plenty of other unforeseen obstacles, Restaurant Olivia co-owners Austin Carson, Ty Leon and Heather Morrison are taking their staff to Greece. The offer was open to all employees and the co-owners are covering all the expenses except airfare. Eleven Restaurant Olivia staff will be traveling to the Mediterranean country July 4 through July 12; the restaurant will be closed during this time but fans are invited to follow along the journey on Restaurant Olivia’s Instagram page.
“The last 18 months would have been rough for everyone everywhere. I’ve been lucky to have some incredible people by my side the whole way,” said co-owner Heather Morrison. “This trip is a way to pass along our thanks to the team for being such amazing professionals through what were ups and down. I am looking forward to our adventure. I’m particularly excited to do some bonding and create fun memories together in Greece. My hope is that we will return with renewed energy and inspiration for what comes next at Restaurant Olivia.”
The team’s itinerary includes time in the historic capital Athens, and the seaport towns of Nafplio, Heraklion and Chania. They will tour and taste at Skouras Winey, Douloufakis Winery and Manousakis Winery where they will select wines to bring home and share with Restaurant Olivia’s guests. The team will also visit markets throughout the country, an annual wine festival and Rhizoma Olive Oil Farms where they will cook lunch using products from local markets.
“We had a trip to Italy planned last summer that, for obvious reasons, was postponed. Over the last year we’ve had a chance to kind of reinvent ourselves and define what it means to work for our little group and our hope is that this trip to Greece becomes the first annual opportunity for international travel with us,” said co-owner Austin Carson. “We’re looking forward to spending time together away from the restaurant, learning and experiencing new things and bringing it all back to Denver.”
After their return, the team will offer two special five-course wine dinners showcasing the best of their trip on Sunday, July 25 with an additional evening August 8, added after the first evening booked so quickly. The menu will be offered for $95 with an optional Greek-focused wine pairing for $75. As always at Restaurant Olivia, prices are inclusive of gratuity and reservations can be booked on Tock.
Restaurant Olivia is located in the Wash Park neighborhood at 290 S.
